The fresh legs of pork used for the production of our cooked hams is purchased on the bone and manually deboned in-house to ensure perfect cutting and scrupulous control. After mixing with salt, spices, natural flavourings and our secret infusion (an old family recipe based on herbs) and gently massaged to absorb the flavours, the ham is cooked very slowly in steam, which gives it its classic pink colour and delicious aroma. In recent years the family has invested heavily to acquire the most advanced technologies in order to produce cooked hams that are increasingly innovative, alongside classic products such as our high-quality cooked ham and whole ham with the skin on, ideal for traditional delicatessens.
